🌶️ Stuffed Peppers with Cauliflower Rice
This is one of those meals that feels like comfort food—but still keeps you on track.
It’s warm, filling, and easy to make ahead. And when done right, you won’t feel like you’re “dieting” at all. That’s the goal.
It's also aesthetically appealing. You'll find that a lot of the HCG 2.0-friendly meals have a lot of color. That's because they are full of vegetables. The brilliant colors in vegetables come from caritinoids. Caritinoids are powerful antioxidents. Antioxidants keep you young.
If you like to "mass prepare" like I do, stuffed peppers work. Prepare it, then put it in the fridge until you're ready to eat. Another reason I like casserole cooked meals is because you can clean the kitchen while it's cooking so all you have to do is clear the table.
Keeping it easy keeps it sustainable!
🛒 Ingredients
Base (HCG 2.0 Friendly):
3–4 bell peppers (any color)
1 lb lean ground turkey
1–2 cups cauliflower rice - Click here if you don't know how to prepare.
1/2 onion, diced
1 tsp MCT oil
1 can diced tomatoes (or fresh if available)
Garlic, salt, pepper
Optional Add-Ins:
Fresh herbs
Chili flakes
Paprika
🧠 Why MCT Oil?
During the HCG 2.0 protocol, we prioritize MCT oil because it’s rapidly absorbed and used for energy, helping support ketosis rather than being stored.
There’s also strong belief that MCTs may help mobilize longer-chain fats—the kind more commonly associated with arterial buildup.

🍳 Instructions
Preheat oven to 375°F
Cut tops off peppers and remove seeds
Heat MCT oil in a pan over medium heat
Sauté onions and garlic
Add ground turkey and cook until browned
Stir in diced tomatoes and cauliflower rice
Season to taste
Stuff the mixture into peppers and place in a baking dish.
Bake for 25–30 minutes until peppers are tender.

This is an easy one to adapt.
For the kids:
Add rice instead of (or alongside) cauliflower rice

Taste is an acquired sense. If kids grow up eating real food—lean proteins, vegetables, whole ingredients—that becomes their normal.
