Zucchini Chicken Noodle Soup

About the Recipe

Yummy soup to make ahead


  • 7 oz chicken breasts (precooked, steamed or baked) 

  • ½ cup onion diced

  • ½ cup celery diced 2 cups zucchini spiralized, noodles ( pasta zero noodles can be substituted for the zucchini)

  • 4 cups chicken broth

  • 1 tsp sea salt

  • ½ tsp freshly ground black pepper 

  • ¼ tsp garlic powder 

  • 1 tsp Italian seasoning 

  • parsley (optional garnish) Fresh, finely chopped


  • Heat a large pot over medium-high heat. Add the onion and celery and sauté for 1-2 minutes, until softened. Season with the salt, pepper, garlic powder, and Italian seasoning.

  • Add the chicken broth and bring to a simmer. Simmer for 5 minutes.

  • While the soup is simmering, dice or shred the pre-cooked chicken breast.

  • Stir in the chicken and zucchini noodles and simmer for an additional 2-3 minutes, until the noodles are tender.

  • Remove from heat, ladle into a bowl, and garnish with fresh parsley.
