Yummy soup to make ahead
7 oz chicken breasts (precooked, steamed or baked)
½ cup onion diced
½ cup celery diced 2 cups zucchini spiralized, noodles ( pasta zero noodles can be substituted for the zucchini)
4 cups chicken broth
1 tsp sea salt
½ tsp freshly ground black pepper
¼ tsp garlic powder
1 tsp Italian seasoning
parsley (optional garnish) Fresh, finely chopped
Heat a large pot over medium-high heat. Add the onion and celery and sauté for 1-2 minutes, until softened. Season with the salt, pepper, garlic powder, and Italian seasoning.
Add the chicken broth and bring to a simmer. Simmer for 5 minutes.
While the soup is simmering, dice or shred the pre-cooked chicken breast.
Stir in the chicken and zucchini noodles and simmer for an additional 2-3 minutes, until the noodles are tender.
Remove from heat, ladle into a bowl, and garnish with fresh parsley.
