About the Recipe

Jenny Mathis famous Pho Soup


  • 5 oz. cooked & peeled shrimp

  • 1 1/2 cups shredded cabbage (they take the place of noodles and make the soup very filling) OR you could use miracle or pasta zero noodles instead

  • 3 baby bella mushrooms chopped

  • 2 green onion stalks (scallions) chopped

  • 3 fresh basil leaves

  • 1 boiled egg cut in half

  • 2 cups chicken broth or bone broth

  • 1 tsp. Coconut oil
    1 tsp. Bragg's Aminos, (use less or more depending on sodium content in chicken broth)

  • 1 clove fresh minced garlic

  • A pinch of black pepper

  • Sriracha (optional, but really adds some flavor to the dish).


In a fry pan, saute veggies in the coconut oil with a few spritzes (1/2 t.) of Bragg's. When the veggies become a little tender, combine veggies and broth in a seperate pot. Add shrimp and simmer until warmed through. Add remaining Bragg's aminos. Add pepper & seasonings of your choice. Pour into a large bowl, add boiled egg and fresh basil. Yum!
