Mexican Egg White Casserole

About the Recipe


  • 1/2 lb ground turkey 

  • 1/4 cup green onion

  • 1-1/2 cups egg whites sausage

  • 2 cups spinach

  • 1/4 cup unsweetened

  • 1/2 red bell pepper 

  • 1/4 cup unsweetened almond milk

  • 1/2 orange bell pepper 

  • 1/8 tsp black pepper


  • Preheat oven to 375 and sparingly coat an 8 x 8-inch with coconut or olive oil.

  • Over medium heat cook the turkey sausage until no longer pink. Add the cumin as it is cooking.

  • Chop the bell peppers and onion. Set aside.

  • Begin layering the dish by spreading the spinach on the bottom of the dish followed the bell peppers and onion.

  • Spread the turkey sausage on top of the vegetables. Beat the black pepper and almond milk into the egg whites and pour the mixture evenly on top.

  • Bake for 30-40 minutes or until the egg whites are firm. Serve and enjoy!
