Ingredients
1/2 lb ground turkey
1/4 cup green onion
1-1/2 cups egg whites sausage
2 cups spinach
1/4 cup unsweetened
1/2 red bell pepper
1/4 cup unsweetened almond milk
1/2 orange bell pepper
1/8 tsp black pepper
Preparation
Preheat oven to 375 and sparingly coat an 8 x 8-inch with coconut or olive oil.
Over medium heat cook the turkey sausage until no longer pink. Add the cumin as it is cooking.
Chop the bell peppers and onion. Set aside.
Begin layering the dish by spreading the spinach on the bottom of the dish followed the bell peppers and onion.
Spread the turkey sausage on top of the vegetables. Beat the black pepper and almond milk into the egg whites and pour the mixture evenly on top.
Bake for 30-40 minutes or until the egg whites are firm. Serve and enjoy!
