Is Gluten-Free Healthy If You Don’t Have Celiac Disease?

Today I responded to the following query on Haro form a journalist from Spa Weekly. I thought I’d add my response to my blog.

Subject of Email: Gluten free is actually a pretty healthy way to eat if you avoid the gluten-free products on grocery store shelves…

All foods on grocery store shelves should be avoided as they’re full of sodium and preservatives to extend shelf-life rather than provide healthy nutrients. That’s why they say shop the perimeters. Gluten-free products from the major food manufacturers are the same. The only danger is not what they ADD to the food to make it gluten-free, but the fiber that is removed. Most people with Celiac Disease are aware of this and supplement their fiber accordingly, but the idiots that buy gluten-free because it’s trendy are… like I said, idiots.

Any wheat or grain is inflammatory, in all of us, but Celiac patients have a hyper-immune response to gluten (gluten is a protein found in wheat, barley and rye) causing a variety of symptoms. Check out the website http://nutritiondata.self.com/. You may need to create an account, but they have some really innovative food statistics. One is called Inflammation Factor. Check it out. Most people with Celiac disease eat a diet that is roughly 80-90% protein/fats with a 1:1 ration of Omega 3 to Omega 6 fats. It’s healthy because they’re not eating carbs, which are a questionable part of any omnivorous diet. Inuit cultures go 8-10 months of the year without carbs, eating high fat/protein diets and there is zero tooth decay, heart disease, cancer and obesity. The word fat has a negative connotation, but fats are actually pretty good for you if balanced with good fats and bad fats.

That was my answer. Might I also add that many of the “trends” in the food industry, such as gluten-free are more a result of capitalism rather than out health. It’s an area of growth and revenue potential for the giants of the food industry. Don’t be suckered and watch your carbs.
