- 1/2 lb ground turkey sausage
- 2 cups spinach
- 1/2 red bell pepper
- 1/2 orange bell pepper
- 1/4 cup green onion
- 1 1/2 cups egg whites
- 1/4 cup unsweetened almond milk
- 1/8 tsp black pepper
- 1/2 tsp cumin
- Preheat oven to 375 and sparingly coat an 8 x 8-inch with coconut or olive oil.
- Over medium heat, cook the turkey sausage until it’s no longer pink. Add the cumin while it is cooking.
- Chop the bell peppers and onion. Then set aside.
- Begin layering the dish by spreading the spinach on the bottom of the dish followed the bell peppers and onion.
- Spread the turkey sausage on top of the vegetables.
- Beat the black pepper and almond milk into the egg whites and pour the mixture evenly on top.
- Bake for 30-40 minutes or until the egg whites are firm.
